Barley and spinach in Sri lankan Coconut soup

This is very healthy soup.easy of preparation.Sri lankan love to have coconut based soups.barley and spinach you can find very easily in sri lanka.low cost recipe too.coconut milk give us the real Asian flavor.

  • 100 g boiled barley
  • 50 g spinach
  • 1 small onion
  • 1 clove garlic
  • 25 g chopped celery
  • 200 ml vegetable stock
  • 50 ml thick coconut milk
  • 2 tsp oil
  • salt and pepper for garnish

  1. Heat the pan,add onion,garlic and celery in to the pan,saute for a wile.
  2. add b oiled barley in to the pan.add the stock as well.
  3. bring the soup in to boil,simmer for 3 minute
  4. add coconut cream at last.take off from the fire.add the spinach leaves once you take off from fire.
  5. add salt and pepper and season it

Do not put spinach when soup was on the fire.because spinach leaves will get dis not boiled the soup once you add coconut milk.once you add coconut milk,keep on stir..
