Spicy chicken curry always give’s a high value to rice and curry.this contain lemongrass flavor.this is very healthy recipe.always sri lankans love the have spicy and healthy recipe like this.thai cooking is easy most of the time.let’s try the recipe.

Ingredients
  • 200 g Boneless chicken cubes
  • 50 g lemongrass
  • 3 tsp green curry paste.
  • 1 small onion chopped
  • 1 tsp galangal chopped
  • 100 ml Coconut milk
  • 50 g red and green pepper
  • 1 lime
  • 1 bunch of coriander
  • 2 kafir lime leaves
  • salt and pepper

Method

  1. take a pan,add the coconut milk and all other curry ingredients together.
  2. add galangal,lemongrass and kafir lime leaves.as well.
  3. bring it to boil.then add the chicken cubes,simmer for 10 minutes.
  4. add the vegetables ( green and red pepper)
  5. finally add chopped coriander and lime.

Note
Serve with steam white rice,this is ideal for dinner,do not use chilli.try to minimum oil to be used.careful with the  cooking time,slow fire do the trick to your thai chicken curry.
