Tomato,chilli & Coconut soup

This is coconut based soup,and spicy too.sri lankan love to gave spices.Ideal for dinner,easy to prepare.most of the time try to use fresh tomatoes.basil give strong aroma for my soup.try my recipe.

Ingredients
  • 2 ripe tomatoes cut in to Julianne
  • 1 small onion
  • 1 clove of garlic
  • 1 tsp chilli pieces
  • 100 ml chicken stock
  • 100 ml coconut milk
  • bunch of coriander
  • bunch of basil leaves
  • 1 tsp oil
  • salt & pepper

Method

  1. heat the oil,add onion garlic and sate,add the stock and bring it to boil,
  2. then used the tomato in to the soup and cook for 2 minutes
  3. add the basil and chilli in to the soup
  4. season the soup,simmer for some time.

Note
I used the semi ripe tomatoes in the soup.equal quantities of stock and milk make relay deference flavor.do not boil once you add coconut milk .this is light soup,if you can garnish with croutons
