Chocolate and walnut mousse with sesame stick

Chocolate mousse is one of famous dessert in sri lanka.and kids love this dessert very much.after the dinner is the ideal time for this.lot of people used cashew nuts in this mousse.but i used walnut here. try this easy mousse recipe,welcome with your all comments.

  • 50 g walnuts, lightly toasted
  • 1 safflower oil
  • 200 g sweet chocolate, melted
  • 4 large egg yolks
  • 200 g  cup sugar
  • 1/4 cup water
  •  1 1/2 cups heavy cream

  1. Process walnuts and oil in food processor with blade and pulse, scraping as needed, until it forms a paste. Add chocolate and process until mixed
  2. Whisk yolks lightly by hand in the bowl of a heavy duty mixer. Boil a couple inches water in a pot which can hold the yolks bowl as a double boiler. Keep water warm in preparation for next step.
  3.  Boil water and sugar together. Remove from heat, very gradually add to eggs, whisking yolks all the while. Put bowl in simmering double boiler pot, continue whisking until mixture is foamy and hot to the touch
  4. Remove eggs from heat, mix with mixer until eggs are pale, holds a soft ribbon, and is cool to the touch.
  5. Fold in walnut-chocolate mixture.
  6. whipped the cream until soft stage.fold in to walnut  mixture,refrigerate until necessary.

do not roast for long time.then it will give you the bitter yeast.and you have to get the correct stage of boiling sugar.
