Lemongrass flavored Carrot and Beans Broth

Carrot and beans soup is one of rich in flavors.i make this soup with bit of this style.fine for dinner.even in a quick lunch this will be ideal.easy recipe and low costed recipe.lemon grass give some herbal value to the soup.and open our test buts.

  1. Heat oil in a pan, sauté garlic and ginger for a minute. Add vegetables, stock cube and lemon grass, stir for 2-3 minutes.
  2. Add one bowl of water, cover the pan with lid and boil the soup for 5-10 minutes till vegetables are tender.
  3. When soup is simmering add corn flour mixture, and salt to taste stir for 2 minutes. Turn off heat add lemon juice and salt to taste.
  4. Ladle soup into bowls garnish with coriander and spring onion.

Some fish sauce is optional.you  use but in small 1 or 2 tsp.do not over cook the carrots and beans.if you over cook the color will be a problem for the soup.
