Method

  1. Place beetroot in a square of foil, spray with oil and season with salt & pepper to taste.
  2. Wrap up tightly and place in pre heated oven -200degC- for 20-30 minutes.
  3.  Cool then peel and slice.
  4. Cook the pumpkin on a BBQ or George Foreman Grill is ideal for 7-10 minutes
  5. Cut in to dices,mixed with herbs and mayonaise
  6. To make the dressing: place all ingredients in bowl or jug, whisk well and eason to taste.
  7. Arrange vegetables alternately on a platter
  8. Drizzle with dressing

Note
when you roast the beet,careful with temperature.over cook with a reason to mash it.even pumkin when you choose have to have a good eye.there are many verities  of pumpkin contain water.I have used mayonnaise,even you can use only the dressing for this.lot of options to make changers.
