Thai Style Red Curry Soup with Leeks

Thai cooking is very famous in sri lanka.it give the spicy and lemon aromatic flavor.this is ideal for adults.for dinner,but in here our chef used shredded leeks as a garnish.give the simple change to the soup.lets try the recipe.

Method

  1. In a large saucepan saute, half the onion, the lemon grass, half the ginger, half the garlic, half the chillies and a palm full of chopped cilantro & basil for a few mins until fragrant.
  2. Pour in the coconut milk, the chicken stock and stir through the Red Curry paste  a squeeze of lime and simmer on medium low heat for about 10mins.
  3. Make rice noodles to package directions
  4. Strain the broth through a sieve and discard the veggies/ lemon grass stalk etc.
    You should have a lovely silky, slightly pink hued broth.
  5. In the same sauce pan, saute the remaining onion, garlic, ginger, chillies. Add the mushrooms
  6. Section the noodles into serving bowls and then spoon the soup over the top.
  7. finally add some shredded leek to the soup make the seasoning according to your choice

Note
you can use chicken,prawns in to this soup.even you can use some more kind of vegetables too.even you can used kaffire lime lives.
