this is very easy salad.and very healthy.you can make this at home very easily.ideal for dinner,even you can use as stater in a set menu.you can used any local vegetable.in sri lanka you can fine lot of fresh vegetable all over.and calamari used as poach.it will give the perfect bland to the salad., let’s tey our Chef ‘s Creative salad.

Method

  1. For the vegetable salad: Clean and trim all the vegetables, then dice into small cubes. Cook each kind of vegetable separately in boiling, salted water. Cook  fennel, carrots,  for 2 minutes each. Cook zucchini, squash,  beans, and peas for 30 seconds. Drain vegetables, then plunge them into a bowl of ice water. Drain again on paper towels to absorb any water. Set aside
  2. For the vinaigrette: In a large bowl, whisk mustard and vinegar together, adding olive oil in a thin stream. Season to taste with salt and pepper.
  3. Add cooked vegetables, tomatoes, and chopped herbs to vinaigrette. Mix gently and thoroughly. Refrigerate for 24 hours.
  4. Arrange the marinated vegetables and poach calamari on plates. Garnish with fresh herbs and a drizzle of olive oil

Note
Poached calamari keep separately in a cool place.this is a combination of two cooking methods.not so easy.do not over cook the calamari.drain the calamari in to ice cold water.make sure to flavor the fish stock well.even if you want can use some white wine too.
