Staff chicken is something new to sri lankan palate.in here Our Chef used spicy spinach filling,this is ideal for dinner.and for the fusion type of meal.this will be a new experience all .let’s try the recipe.

Method

  1. heat oven to 300°F.
  2. Combine flour and seasonings. Separately mix spinach, feta cheese, and lemon juice; set aside.
  3. Lay one breast on a clean cutting board. Use a paring knife inserting it gently into the thickest tip of the breast. Make a horizontal incision in the breast, be careful to not cut through to the sides. Use your fingers to deepen the cavity made by the incision. Repeat process with remaining breasts.
  4. . Trim tip of bag then insert it into the the cut side of the chicken breasts squeezing in an even amount of filling into each. Dredge stuffed breasts in flour mixture, evenly coating each side.
  5. Heat olive oil in a 12-inch oven-safe skillet over medium. Lay each breast top side down in the oil, brown for approximately 3 to 5 minutes. Gently turn chicken over then place skillet on middle rack of oven and bake an additional 20 minutes.
  6. serve with vegetable or rice.

Note
you can use any filling here.but do not use nuts.but plums will be ideal.and you can roast this as well.but do not over cook the chicken.the chicken should contain some moisture as well.it give the smooth teats to you pallet.
