Mushroom and Noodles in Fish Stock

This is a soup made out of fish stock.and rich in flavors.i used some oyster mushroom here for the soup.ideal for lunch time.quick in preparing.give some spicy flavor to the soup.and enhance by sri lankan touch.coriander leaves give the perfect bland to the soup.

  1. Add fish stock  mushrooms, all but 1/2 cup onions, garlic, basil, bay leaf and salt into a large pot. Bring to boiling, then reduce to a simmer. Partially cover. Allow to simmer for 10  minutes. Strain through very fine strainer and keep about a 1/2 cup of the mushroom/onion/garlic mix and return to broth.
  2. Bring broth back to boiling. Add egg noodles, remaining onion,Cook until noodles have only 1 or 2 minutes and add the remaining mushrooms (sliced). Garnish with fresh parsley.
  3. correct seasoning salt and pepper

Add the Vegetable if are free to add any vegetable in to the soup in small dices. and may be you can add some cornstarch in to the soup to make the soup thick.specially make sure to have good quality fish stock,or fish broth
