Method

  1. Heat the oil in a large pot over medium heat.
  2.  Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute.
  3.  Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes.
  4.  Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes.
  5.  cook until no longer translucent about 5 minutes.
  6. Stir in the lime juice; season with salt; garnish with cilantro.

Note
In this soup you are free to add some prawns,that is optional.and this is a soup you will feel some lot of salty in here.by having a soup idea to open up your teast buts for next meal.do not put salt in the chicken stock.cos end of this soup there will be lot of salty and lime flavors a lot.you are free to served pita bread with in small rolls,free to  served the bread separately too
