Sri Lankan chef and hotelier Duminda Abyesiriwardena started his cooking early in the day, preparing a slow-braised beef thiyal with coconut vinegar, spices and aromatic pandanus leaves. “This flavorful beef curry exemplifies the Slow Food philosophy, using local ingredients and traditional methods that are being lost to new generations,” he said.

It’s my goal as a chef to help get Sri Lankan culture back on track, and to steer youth away from the masses of fast food options that are attracting them. I’m involved in various culinary social projects, such as visiting schools to teach youth about the story behind their food, starting with ingredients, such as kurakkan, the nutritious finger millet which is ground and used to make the roti I prepared today.”
