Tomato and Rice stick Soup

Another tasty and eye catching soup by Chef Duminda.

He has used thai rice sticks in this soup. We grow tomatoes  and is not difficult to find fresh tomatoes in our country. A very easy dish and ideal for lunch. Chef Duminda always introduce fresh food & low  cost recopies  Try this and you will enjoy.

  1. Add some oil in a pan..saute onion, carrot, celery  and tomatoe for few minutes.
  2. Then pour in some chicken stock and bring it to boil & let  it simmer until cooked.
  3. Mean while let the thai noodles soak in warm water for 10 minutes
  4. Then blend soup which we let to simmer into smooth cream.Keep on stove again and finish seasoning it with salt and pepper  for your taste.
  5. Before you take the soup off the fire add some cream.
  6. Now add the soaked thai noddles in to the soup…and the soup is ready to be served. You may sprinkle some chopped parsley on top when sending to the table.


Do not soak glass noodles in hot water. You have to use slightly warm water.
And please remember to remove the skin of tomatoes befor you add to the soup.
You should not boil the soup once the cream is added.
For all spicy lovers….you are free to add some chilli as you prefer.
