Battered Fried Prawns with Thai red Curry Cream

In Sri Lanka we are popular for sea food, and when you say sea food there are many types of sea food that we can consume. Out of these many…we are going to introduce to all of you how to prepare Battered Fried Prawns with a little adjustments on the normal recipe by our Master Chef. Hope you all try this at home.

  1. make the batter first , using chopped curry leaves and chilli.( the batter-flour,egg,backing powder) In the meantime wash and dry the prawns and season with salt and pepper
  2. make the sauce now, 1st heat a pan.add onion and garlic and saute for while.add the thai past.and mixed it.follow with tomato puree,and cream..reduce the fire and cook the sauce for a while on low heat.
  3.  Now take another pan & add oil. Keep on fire & when the oil is heated dip the prawns in the batter and fry  untill golden brown. Drain in to a colander.
  4. Arrange as shown in the plate and serve with sauce.

When you are adding the prawns into the oil pan, make sure its in the correct temperature to fry…as the prawns need to be crispy. The prawns can be fried just before sending to the table.  The sauce can be served as preferred.
