Method

  1. Grind chilies, shallots, salt , dried shrimp and garlic in a mortar and pestle to coarse chili paste.
  2. Heat half cooking oil in a wok, stir-fry eggplant pieces for one minute over medium heat. Remove from wok and drain on paper towel.
  3. Heat the rest of the oil. Stir fry chili paste till fragrant, about 2 minutes, over medium heat.
  4. Add tamarind mixture and palm sugar. Let boil, for a couple of minutes.
  5. Toss in eggplants. Mix well and cook for another minute. Remove from heat and serve with warm steamed rice.

Note
you are free to use any kind of gourd vegetable in same preparation.do not over cook the egg plant.
