Rice salad is one of famous salad in western Europe,But here i’m going to introduce  in to Asian palate.and this will be famous in sri lanka too. Be course i’m going to bring east west combination to the food.and you can find lot of rice in south east Asia easily .and good for dinner.when you seeking light salad this will be a ideal choice.
Ingredients
  • 50  g red kidney beans
  • 50 g corn
  • 100 g basmathi rice
  • 1 red,green and yellow bell pepper
  •  1 onion
  • some coriander leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 6 tablespoons fresh lime juice
  • 6 tablespoons olive oil
  • salt to taste

Method

  1. For the dried beans, put them in a large pot and cover with water by 2-3 inches
  2.  Bring the water to a boil, reduce the heat so that it simmers and partially cover. Cook the beans for about 60-75 minutes, until cooked through but not mushy. This is a good time to get the rice going. When the beans are done, drain them and set aside.
  3. Once the rice and beans are cool, combine them in a serving bowl, and add the red pepper and onion.
  4. For the dressing, whisk together all of the dressing ingredients, then toss it with the rice and bean mixture. Add the cilantro and toss once more. Serve and enjoy

Note
Do not put lot of salt.it will take the flavor of the dish.and if you want still u can use red rice as well.anu i beel basmathi is good or still u can use jasmin rice.and that is give the softness to the dish.main thing this is a light salad.if you want you can mixed some lettuce as well
