Branjal Moju

Brinjal moju is one of popular side dish in sri easy to make and it is come from Portuguese.and this Dish was famous southern cost in sri lanka and famous Goa in India.try this recipe and let me know the comment.

  • 250 ml  Vegetable Oil
  • 400 g Egg plant
  • 3 cloves of Garlic
  • 1 tsp traumatic powder
  • 100 g Onion
  • 20 g sugar
  • 30 g Green chillies
  • 1 capsicum
  • 1 tsp Muster seed
  • 3 tsp vinegar
  • 3 sliced ginger

  1.  Slice the eggplant and green pepper length ways clean the shallots, crush the garlic and shred the ginger.
  2.  Heat the oil and fry eggplant slices until browned.
  3.  Remove, drain and set on one side. In the same oil lightly fry the Green chillie,  and onion  and when soft drain and set on one side.
  4.  Pour off most of the oil and add garlic, ginger, vinegar, salt, turmeric and mustard to the pan and cook for 2 – 3 minutes.
  5. Add the eggplant slices, green pepper and shallots and cook for a further 5 minutes.

Do not fry brinjal for long time.then it will test bitter.and even do not use lot of oil.then once you had this brinjal
