Flakey Mango mousse – Chef Duminda’s Style

Sri lanka is a Country having lot of tropical fruits.mango is one of famous fruit in subcontinent.and each province have there unique mango variates.so mango mousse will be a easy recipe for all my fans.and it low coasted menu too.fresh fruit give the healthy dessert to menu.

  • 200 g mango puree
  • 200 g Chopped mango
  • 150 g whipped cream
  • 2 tsp gelatine
  • 50 g fine sugar

  1. Take ripe mango,and make puree out of this
  2. and other half and cut in to small dices.and keep a side
  3. Mean wile whipped the cream and whipped up to the form stage.
  4. dilute the gelatin,in few drops of  hot water
  5. take a bowl,add the puree in to the bowl,and mixed with sugar
  6. add the gelatin in to the mango puree.
  7. now beat the wipe cream until the puffy stage.mixed with the puree mixture.
  8. add the chipped mango and fold finely.and keep in the refrigerator for 30 minutes.
  9. after fill the mouse in to piping bag with star nawsale .and pipe on to a plate or glass
  10. finally garnish with multi color rice vermicelli

Becairful when u are making gelatin,if you use extra.then you mousse will be hard.mousse should be very smooth.i use some gelatin because of the temperature in Sri Lanka.still you can use mousse with out gelatine.
