Tomato and Coconut cream soup

this tomato soup flavored with coconut and basil.i have seen many soups finishing with cream.here i used lot of coconut based recipes.Sri lanka is a country ,can find many fresh coconut every ware.and even sri lankan basil much more strong flavor.it grown up up country and coastal areas
Ingredients
  • 200 g peel tomatoes
  • 1 no onion
  • 1 clove of garlic
  • 25 g celery
  • 1 tsp tomato pest
  • 25 g butter
  • 2 tsp coconut flakes
  • 50 ml thick coconut cream
  • 100 ml flavored vegetable stock
  • pinch of basil leaves
  • 2 tsp Parmesan cheese

Method

  1. Saute the onion and garlic,add celery and peel tomato in to it add the stock .bring it to boil.
  2. allow to cool,puree it.reheat a pan add the blender soup again and bring it to simmering point.
  3. add thick coconut cream.simmer.add roasted coconut flakes too.
  4. finally and coconut cream,Parmesan cheese and basil as a garnish

Note
Do not boil the soup,after put coconut cream.even the coconut cream used as a thickening agent
